One or two potatoes
Oil ~ About 1 tbs (Just enough so that nothing stuck to my skillet)
Dice the potatoes, bell peppers, tomato, and onions. Add oil to the skillet and then add the potatoes, bell peppers, tomato, and onions . Cook on med heat. Add chives, salt, pepper, garlic powder, red pepper to taste. Once the potatoes are soft and fully cooked, turn off the heat and add the freshly shredded cheddar cheese.
