I used to not like meatloaf. I would do everything I could to avoid it. It was always boring to be honest. So, I decided to change that and I began to play with it until I created this recipe. My family now gets excited when they see it on the weekly menu. I am assuming it is no longer boring….
Meatloaf Recipe
Supply List:
2-3 lbs of some form of ground meat (I used hamburger)
2 Eggs
1 1/2 cups of breadcrumbs (I used panko)
About 2 cups of salsa (my recipe is below)
About 1 cup of shredded cheese (I used white cheddar)
Pepper
Salt
Garlic powder
Onion Powder
Big bowl
Baking dish
Instructions:
Throw everything (except about half the cheese and the baking dish) together in the bowl and mix together until it is thoroughly blended. Be careful, your hands may try to turn into ice during this phase of the recipe. It is really freaking cold stuff!

Once mixed, transfer the mix to your baking dish

Top with the rest of the cheese, and bake at 425 until fully cooked. The meatloaf will pull away from the sides of the dish and the cheese will be a golden color when completely cooked through.

Enjoy….

Salsa Recipe:

Supply List:
4 Assorted bell peppers
1 Red onion
1 Lemon
1 Lime
1 Hot pepper of your choice (Use caution!!! These things freaking BURN like no tomorrow if you get it into your eye by accident! I use gloves now when handling them. I got tired of scrubbing my hands and still burning my eyes a day or two afterwards. If you decide that these are not worth your time, you can always use mild to hot pepper flakes instead.)
2 Tomatoes
Cilantro
Garlic or garlic powder (if using fresh garlic about 1-2 cloves)
Salt
Pepper
A strainer to squeeze the lemon and lime into
Knife
Cutting Board
Bowl
Instructions:
Dice the bell peppers, red onion, tomatoes, hot pepper (if using fresh), garlic (if using fresh) and put into the bowl.

Squeeze the lemon and lime into a strainer over the bowl.

Add (to taste) the salt, pepper, cilantro, garlic powder (if not using fresh), red pepper flakes (if not using fresh).

You can either use immediately or store in a container and place in the fridge to use the following day. The difference will be the taste. The flavors will blend overnight.
