This is a super easy to make bread recipe that rises overnight (hence the name Night Bread). Takes about 5 minutes to mix it all together and then you forget about it. Get on with your life and bake it in the morning. It is an absolute favorite here!
Supply List:
3 cups flour (I used unbleached all purpose)
1/2 cup to 1 cup of flour (Will be needed on day 2)
1 tsp Active dry yeast
1 tsp salt
2 cups Water (at 110-115 degrees)
Large bowl
Large towel, plastic wrap, anything you want to use to cover the bread (Optional)
Oil (I use coconut oil)
Baking dish or casserole dish
1 Egg whisked (Optional)
Instructions:
Mix yeast and water together in the bowl.

Add the rest of the ingredients to the bowl (Except the flour for day 2).

Mix the ingredients together. (Don’t panic…Here is where you breathe. It is supposed to be a sticky, loose mess of a dough.)

I cover with a towel, plastic wrap, t- shirt etc, only when I am leaving it out on the counter top. (I do not usually cover mine because I actually place it in my microwave or oven to rise and it does not dry out in there.)
Leave it alone for about 15-18 hours. It will rise and then fall. Again it is all good!

Add about 1/2 cup to 1 cup of flour to the dough (Just enough to get it to form into a ball).




Grease the dish you are baking in with the oil (Make sure you get an even and thorough coating or it will stick like like a bitch and you will not be happy with me!!)
If you want a shiny golden brown crust brush with an egg.


If you do not want a shiny golden brown crust then skip this step.

Bake at 325 for about 40 minutes.
You will know the bread is done when you tap on the crust and it makes a hollow sound.


I just made this amazing bread. I covered the bread dough in the bowl with plastic and in the morning it was still really liquidy, so when I was ready to make it, it took about 2 cups of flour to get it to bread consistency for baking. I just used my dough hooks in my stand mixer and mixed in the flour, dumped it into the baking dish and basted it with the egg wash. The result was an amazing loaf of yumminess.This is my favorite toasting bread.
I never have plastic wrap or sandwich baggies here. But I may have to invest in the wrap to try the bread recipe this way. I am so glad you like it! More bread recipes to come!
