So, if you read my blog post “One Of Those Days“, you will remember I gave you a sneak peak at my dinner creation and I promised you the recipe. Well, here it is. Now, please understand that my day continued on into that night while I was cooking. I was soooooooooooooo having one of those nights! Nothing was going my way! I went to make pasta only to realize I did not have any. I went to make grilled cheese, had 1/2 loaf of bread and no cheese other than Parmesan. As I scoured the pantry I had peanut butter, panko bread crumbs, flour, a can of olives (Which Hubby will run from. Yep, he just LOVES olives that much!), a small amount of white wine, and rice. In the fridge I had milk, juice, Parmesan cheese, lettuce, peppers, mushrooms, jar of homemade stock, pickle juice, asparagus, 2 really small tomatoes, 1/2 stick of butter, and fajita meat. What the heck was I supposed to create with that to feed 5 people???
I love creativity, especially on a day like I was having. The fact that is so good was seriously a huge bonus!!! Be careful this meal is really difficult to make! It will take HOURS to make!! Actually, the longest part of this recipe is making the rice.
Beef And Rice
Ingredients:
1 lbs Fajita meat
Peppers (I used green, yellow, orange, and red bell peppers)
2 cloves Garlic
Shallots or onion
Mushrooms
1/4 cup White wine
2 1/2 cups Rice of your choice)
Parmesan cheese
Enough stock to make your rice (recipes here and here)
Directions:
Cook the rice to directions on the package using the stock in place of water.
Dice or slice onion / shallot, peppers, mushrooms, slice the fajita meat into thin strips if it is not already, mince garlic and place in the skillet and let brown on med heat.
Add seasonings and wine. Simmer just long enough to blend the flavors.
Put the meat and veggies over top of the rice, drizzling some of the juices from the meat on top. Add Parmesan cheese to the top and ENJOY!!!!
