Black Bean, Tortilla, & Salsa Soup

OK, so I am going to confess something to you all…I can NOT stand two of the main ingredients in this soup. As in seriously….THERE. IS. NO. LOVE. AT. ALL!

I can hear your questions now! So why make the soup then? How did you even create the recipe? Why would you even bother to create the recipe in the first place? Why did you add the 2 ingredients you can not stand in it? And finally….What the Hell are the 2 ingredients that you keep talking about????

Let me answer those exact questions.

When I first began my health journey a friend of mine was telling me to try different foods. I was craving things that I NEVER ate before (I just flat out could not stand them). She challenged me to create a recipe with my cravings in them as the main ingredients. The two ingredients…black beans and avocados. I can not stand the taste or consistency of either one of them. I, of course, took her up on the challenge!

I decided to make a soup. I figured what could go wrong with turning it into a soup? OMG! It was HORRIBLE! It looked and smelled like vomit! Tasted like dirt! IT WAS ABSOLUTELY THE WORST THING I HAVE EVER CREATED!!!! I refused to throw it away! I played and played with the recipe. And then the magic happened….

Supply List:

Black Beans (I choose to use canned black beans this time. I have made it with fresh as well)

3 pints of stock (Recipe here and here)

2 Avocados

Salsa (Recipe here)

Cheddar cheese

Sour cream

Tortilla chips

Cumin

Salt

Pepper

Cilantro

Garlic powder

Pot

Colander

Food processor with blade attachment

Directions:

Place stock in the pot.

Rinse and drain the beans very well. (Especially if using canned!)

Place the beans in the processor and blend until smooth.

Beans are ready to go into the stock...

Add them to the pot with stock.

Skin the avocado and place the pulp (minus the pit) in the food processor.

Blend until smooth and add to the pot.

Add cheddar cheese and salsa to the soup.

I added about 1/2 cup of freshly grated cheese and about 2 pints of salsa to mine. You can add more or less. Up to you.

Simmer on med for about 30 minutes.

Add salt, pepper, garlic powder, cilantro to taste.

Spoon into bowls. Add a heaping spoon of salsa, sour cream, and cheddar cheese to it.

Serve with tortilla chips.

Needless to say, I still do not like black beans and avocados. However, bring it on in this soup! Even the Hubby loves it!
